Ingredients

For the Chicken:

  • 2 large chicken breasts, cubed
  • ½ white onion, diced
  • 1 tbsp minced garlic
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 tsp all-purpose seasoning
  • Salt and pepper to taste

For the Potatoes:

  • 4 small butter potatoes, cubed
  • 1 tsp kosher salt
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp all-purpose seasoning
  • 1 tbsp olive oil

For the Garlic Parmesan Sauce:

  • ⅓ cup mayonnaise
  • ⅓ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp lemon juice
  • Pinch of sugar
  • Salt, pepper, and Italian seasoning to taste

To Finish:

  • 1 cup shredded mozzarella cheese (and extra Parmesan if desired)

Instructions

  1. Cook the Chicken: Season the cubed chicken with olive oil, paprika, Italian seasoning, and all-purpose seasoning. Sauté the chicken in a skillet with butter and olive oil over medium heat until it’s halfway cooked.
  2. Add Onion and Garlic: Stir in the diced onion and minced garlic. Continue cooking until the chicken is fully cooked and golden brown.
  3. Cook the Potatoes: While the chicken cooks, season the cubed potatoes with salt, Italian seasoning, paprika, and olive oil. Air fry them at 400°F for 15-20 minutes until tender and crispy.
  4. Make the Sauce: In a small bowl, mix mayonnaise, Parmesan cheese, olive oil, vinegar, lemon juice, sugar, salt, pepper, and Italian seasoning to make the creamy garlic Parmesan sauce.
  5. Combine: Add the air-fried potatoes to the skillet with the chicken. Pour the garlic Parmesan sauce over everything and mix well.
  6. Top with Cheese: Sprinkle shredded mozzarella and extra Parmesan on top. Either cover with a lid to melt the cheese on the stovetop or pop it in the oven at 375°F for 5 minutes until bubbly and golden.
  7. Serve: Pair with your favorite veggie side and enjoy!
