Ingredients
For the Chicken:
- 2 large chicken breasts, cubed
- ½ white onion, diced
- 1 tbsp minced garlic
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1 tsp all-purpose seasoning
- Salt and pepper to taste
For the Potatoes:
- 4 small butter potatoes, cubed
- 1 tsp kosher salt
- 1 tsp Italian seasoning
- 1 tsp paprika
- 1 tsp all-purpose seasoning
- 1 tbsp olive oil
For the Garlic Parmesan Sauce:
- ⅓ cup mayonnaise
- ⅓ cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 tbsp lemon juice
- Pinch of sugar
- Salt, pepper, and Italian seasoning to taste
To Finish:
- 1 cup shredded mozzarella cheese (and extra Parmesan if desired)
Instructions
- Cook the Chicken: Season the cubed chicken with olive oil, paprika, Italian seasoning, and all-purpose seasoning. Sauté the chicken in a skillet with butter and olive oil over medium heat until it’s halfway cooked.
- Add Onion and Garlic: Stir in the diced onion and minced garlic. Continue cooking until the chicken is fully cooked and golden brown.
- Cook the Potatoes: While the chicken cooks, season the cubed potatoes with salt, Italian seasoning, paprika, and olive oil. Air fry them at 400°F for 15-20 minutes until tender and crispy.
- Make the Sauce: In a small bowl, mix mayonnaise, Parmesan cheese, olive oil, vinegar, lemon juice, sugar, salt, pepper, and Italian seasoning to make the creamy garlic Parmesan sauce.
