Yield: 3 Servings
Ingredients
- 6 bone-in chicken thighs, trimmed of fat
- 2 lemons, thinly sliced
- 1 tbsp lemon zest
- 1 tbsp lemon juice
- 2 tbsp freshly chopped herbs (like basil, parsley, rosemary, or thyme)
- 1 tbsp garlic, minced
- 1 tbsp honey
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/3 cup olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix olive oil, garlic, herbs, honey, lemon juice, and seasonings to create a marinade.
- Add the chicken thighs to the marinade, making sure to coat them well, especially under the skin.
- In a baking dish, layer the lemon slices on the bottom.
- Place the chicken thighs on top and pour the remaining marinade over them. Add a little lemon zest for extra flavor.
- Bake on the top rack of the oven, uncovered, for about 50 minutes, or until the chicken is cooked through and golden brown.
- Remove the chicken from the oven, baste with the juices, and serve warm.
Notes
If you prefer a milder lemon flavor, skip the lemon zest and don’t cook the chicken on top of the lemon slices. The lemon juice in the marinade will still give a nice, subtle flavor.
