Ingredients

  • 4 bone-in chicken thighs, trimmed
  • ½ cup mayonnaise
  • ½ cup shredded parmesan cheese
  • 1 tsp garlic paste
  • 1 tsp kosher salt
  • 1 tsp blackening seasoning
  • 1 tsp smoked paprika
  • ½ lb baby Dutch potatoes (optional)
  • Garnish: 1 tsp lemon zest, 1 tbsp fresh parsley

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using, arrange the baby Dutch potatoes in a single layer in a baking dish.
  3. Place the chicken thighs on top of the potatoes.
  4. Season the chicken with kosher salt, blackening seasoning, and smoked paprika. Spread mayonnaise, garlic paste, and shredded parmesan cheese evenly over the chicken.
  5. Mix everything together in the dish, ensuring the potatoes (if using) are coated.
  6. Bake for 1 hour and 15 minutes or until the chicken skin is crispy and the internal temperature reaches 165°F (75°C).
