Ingredients
Here’s what you’ll need:
- Chicken: 1 lb boneless, skinless chicken thighs
- Seasonings: 1 tsp all-purpose seasoning, 1 tsp dried parsley, 1 tsp paprika (optional), salt, and pepper
- Olive oil: 1 tbsp
- Sausage: 1/2 package turkey kielbasa, sliced
- Vegetables: 1/2 red bell pepper, 1/2 green bell pepper, 1 stalk of celery, 1/2 white onion, all diced
- Garlic: 1 tbsp garlic paste
- Rice: 1 cup of parboiled rice
- Chicken stock: 2 cups
- Bouillon cube: 1 cube
- Fresh parsley: For garnish
Easy Instructions
- Preheat the Oven: Set it to 375°F (190°C).
- Season the Chicken: Mix seasonings and coat the chicken. Set aside.
- Sear the Chicken: In a cast iron skillet, heat olive oil over medium heat. Sear chicken for about 3 minutes on each side until golden brown, then set it aside.
- Cook the Veggies and Sausage: In the same skillet, add sausage and veggies (add more oil if needed). Sauté for 3-5 minutes until the sausage browns and veggies soften. Season with a bit more all-purpose seasoning.
- Add Rice and Broth: Stir in the rice, chicken stock, garlic paste, and bouillon cube, scraping up any browned bits from the skillet.
- Bake: Place the chicken on top of the rice mixture. Transfer the skillet, uncovered, to the oven and bake for 30 minutes or until rice is tender and all the liquid has been absorbed.
- Serve: Garnish with fresh parsley and enjoy!
