But sometimes, I just want a break and a little pampering! On one of our visits, we ordered shrimp scampi linguine, and it stuck with me. I decided to create my own version, and I think it’s even better! So, let’s dive into making this delicious dish.
Ingredients You’ll Need
For the Shrimp:
- 2 pounds jumbo shrimp (peeled, deveined, tails on)
- 2 tablespoons melted butter
- 1 teaspoon Cajun seasoning
- 1 teaspoon lemon pepper
- Kosher salt to taste
For the Panko Breading:
- 1 cup plain panko breadcrumbs
- ½ cup grated Parmesan cheese
- ½ teaspoon Cajun seasoning
- ½ teaspoon lemon pepper
- Kosher salt to taste
- ⅓ cup vegetable or canola oil (for frying)
For the Scampi Cream Sauce:
- ½ cup chopped parsley
- ½ cup chopped tomatoes
- ½ cup finely diced red onion or shallot
- 1 tablespoon garlic paste or chopped garlic
- 2 tablespoons butter
- Salt and pepper to taste
- 1½ cups Pinot Grigio or any dry white wine
- 2 cups heavy cream
- 1 cup Parmesan cheese or Italian cheese blend
- ½ teaspoon Cajun seasoning
- ½ teaspoon lemon pepper
- 1 tablespoon lemon juice
- Kosher salt to taste
- 1 tablespoon fresh lemon zest
- 1 pound linguine
Instructions
- Cook the Pasta:
Boil the linguine according to the package instructions. Drain and set aside. - Prepare the Shrimp:
Season the shrimp with melted butter, Cajun seasoning, lemon pepper, and salt. Dredge in panko breading, and place on a rack until ready to fry. - Fry the Shrimp:
Heat oil in a frying pan over medium heat. Fry the shrimp for 3 minutes on each side until golden brown. Set aside on a cooling rack. - Make the Scampi Cream Sauce:
In a large non-stick skillet, melt butter and sauté the vegetables until fragrant (about 2 minutes). Deglaze with white wine and let it cook for 1 minute. - Add Cream and Cheese:
Add heavy cream, season to taste, and mix in the cheese and lemon juice. Let the sauce simmer until it thickens (about 5 minutes). - Combine Everything:
Add the cooked linguine to the sauce and toss to combine. Turn off the heat and place the shrimp on top. Garnish with lemon zest if desired. - Serve:
