Copycat Cheesecake Factory Shrimp Scampi Linguine

Let me show you how to make my Copycat Cheesecake Factory Shrimp Scampi Linguine!

Why I Love Cheesecake Factory Dates
Some may think of dates at the Cheesecake Factory as cliché, but I find them romantic. My husband and I often go there, even though he loves my cooking. But sometimes, I just want a break and a little pampering! On one of our visits, we ordered shrimp scampi linguine, and it stuck with me. I decided to create my own version, and I think it’s even better! So, let’s dive into making this delicious dish.

Ingredients You’ll Need

For the Shrimp:

  • 2 pounds jumbo shrimp (peeled, deveined, tails on)
  • 2 tablespoons melted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon lemon pepper
  • Kosher salt to taste

For the Panko Breading:

  • 1 cup plain panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • ½ teaspoon Cajun seasoning
  • ½ teaspoon lemon pepper
  • Kosher salt to taste
  • ⅓ cup vegetable or canola oil (for frying)

For the Scampi Cream Sauce:

  • ½ cup chopped parsley
  • ½ cup chopped tomatoes
  • ½ cup finely diced red onion or shallot
  • 1 tablespoon garlic paste or chopped garlic
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1½ cups Pinot Grigio or any dry white wine
  • 2 cups heavy cream
  • 1 cup Parmesan cheese or Italian cheese blend
  • ½ teaspoon Cajun seasoning
  • ½ teaspoon lemon pepper
  • 1 tablespoon lemon juice
  • Kosher salt to taste
  • 1 tablespoon fresh lemon zest
  • 1 pound linguine

Instructions

  1. Cook the Pasta:
Boil the linguine according to the package instructions. Drain and set aside.
  2. Prepare the Shrimp:
Season the shrimp with melted butter, Cajun seasoning, lemon pepper, and salt. Dredge in panko breading, and place on a rack until ready to fry.
  3. Fry the Shrimp:
Heat oil in a frying pan over medium heat. Fry the shrimp for 3 minutes on each side until golden brown. Set aside on a cooling rack.
  4. Make the Scampi Cream Sauce:
In a large non-stick skillet, melt butter and sauté the vegetables until fragrant (about 2 minutes). Deglaze with white wine and let it cook for 1 minute.
  5. Add Cream and Cheese:
Add heavy cream, season to taste, and mix in the cheese and lemon juice. Let the sauce simmer until it thickens (about 5 minutes).
  6. Combine Everything:
Add the cooked linguine to the sauce and toss to combine. Turn off the heat and place the shrimp on top. Garnish with lemon zest if desired.
  7. Serve:
Enjoy your Copycat Cheesecake Factory Shrimp Scampi Linguine warm!

Yield: 4-6 servings
Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 1 hour

Notes:
The panko breading is light and not heavy. If you want a thicker coating, dip the shrimp in an egg wash before the panko.

Enjoy this delightful dish at home, just like at the Cheesecake Factory!
