It features crispy parmesan chicken cutlets served over pasta in a rich Cajun cream sauce. Perfect for a weeknight dinner or special occasion, this dish is easy to make and absolutely delicious.

Ingredients

For the Chicken:

  • 4 thin chicken cutlets
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp Cajun seasoning
  • Salt & pepper, to taste
  • 3 eggs, beaten
  • 1 ½ cups panko breadcrumbs
  • 1 cup grated parmesan cheese
  • ¼ cup vegetable or canola oil (for frying)

For the Cajun Cream Sauce:

  • ½ cup mushrooms, finely diced (optional)
  • ½ cup red bell pepper, finely diced
  • ½ cup green bell pepper, finely diced
  • ½ cup white onion, finely diced
  • 1 tbsp garlic paste
  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • 2 tbsp butter
  • 2 cups heavy cream
  • 1 cup parmesan cheese
  • 1 tsp Cajun seasoning (adjust to taste)
  • 9 oz pasta (Girelle, bowtie, or any pasta you prefer)
  • Fresh parsley for garnish (optional)

Instructions

For the Chicken:

  1. Pat the chicken dry and season both sides with onion powder, garlic powder, Cajun seasoning, salt, and pepper.
  2. In a bowl, mix the panko breadcrumbs and parmesan cheese. In another bowl, beat the eggs.
  3. Dip the chicken in the egg wash, then coat it in the panko-parmesan mixture. Press the coating onto the chicken to make sure it sticks.
  4. Heat oil in a pan over medium heat. Fry the chicken for 3-4 minutes on each side until golden brown and cooked through.
  5. Set the chicken aside on a wire rack or paper towels to cool.

For the Pasta and Sauce:

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a skillet, melt butter over medium heat. Add onions, mushrooms, and bell peppers, and sauté for 2-3 minutes until soft.
  3. Add garlic, heavy cream, and parmesan cheese. Stir well until the sauce is smooth.
  4. Season with Cajun seasoning, salt, and pepper. Let the sauce simmer and thicken for about 5 minutes.
  5. Combine the cooked pasta with the sauce, making sure the noodles are well coated.
  6. Turn off the heat and top the pasta with the sliced chicken.
  7. Garnish with fresh parsley, if desired, and serve hot.
