Ingredients
For the Chicken:
- 4 thin chicken cutlets
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp Cajun seasoning
- Salt & pepper, to taste
- 3 eggs, beaten
- 1 ½ cups panko breadcrumbs
- 1 cup grated parmesan cheese
- ¼ cup vegetable or canola oil (for frying)
For the Cajun Cream Sauce:
- ½ cup mushrooms, finely diced (optional)
- ½ cup red bell pepper, finely diced
- ½ cup green bell pepper, finely diced
- ½ cup white onion, finely diced
- 1 tbsp garlic paste
- 1 tbsp olive oil
- Salt & pepper, to taste
- 2 tbsp butter
- 2 cups heavy cream
- 1 cup parmesan cheese
- 1 tsp Cajun seasoning (adjust to taste)
- 9 oz pasta (Girelle, bowtie, or any pasta you prefer)
- Fresh parsley for garnish (optional)
Instructions
For the Chicken:
- Pat the chicken dry and season both sides with onion powder, garlic powder, Cajun seasoning, salt, and pepper.
- In a bowl, mix the panko breadcrumbs and parmesan cheese. In another bowl, beat the eggs.
- Dip the chicken in the egg wash, then coat it in the panko-parmesan mixture. Press the coating onto the chicken to make sure it sticks.
- Heat oil in a pan over medium heat. Fry the chicken for 3-4 minutes on each side until golden brown and cooked through.
- Set the chicken aside on a wire rack or paper towels to cool.
For the Pasta and Sauce:
- Cook the pasta according to the package instructions. Drain and set aside.
- In a skillet, melt butter over medium heat. Add onions, mushrooms, and bell peppers, and sauté for 2-3 minutes until soft.
- Add garlic, heavy cream, and parmesan cheese. Stir well until the sauce is smooth.
- Season with Cajun seasoning, salt, and pepper. Let the sauce simmer and thicken for about 5 minutes.
- Combine the cooked pasta with the sauce, making sure the noodles are well coated.
